When adding color to a wedding cake, always remember that the color should be spread out evenly over the tiers. On this cake the bottom two tiers have color, but it just looks like the decorator forgot to put color on the top tier. Make My Cake Special

With all of the TV shows on today about cakes we are into everything specialty. Everyone who comes into my bakery, wants something different from the normal supermarket cake. Luckily for them I can supply it. I can do anything if the customer is willing to pay it, most times they are not. So I offer things such as small fondant or piped 3D figures on their cakes. If they get a drawing (since I do it in airbrush) I can accent it with colored icing to make certain things stand out.  This way people are not getting the same cake as they got when they were a child and they did not spend a fortune on their cake.

Topsy Turvy Cake

This is an example of our topsy turvy cake. By all means they are not my favorite cakes to do. I think they were created when a baker screwed up his batch of cakes. He did not want to remake them, so he just iced it as is and called it the topsy turvy cake.

Customers come into the bakery with picture of exactly what they want their cake to look like all the time. We do not match cakes exactly because we do not like to infringe on other people’s work. Also, when we make our cakes we do not square our cake tiers off, we round them.

Here the top tier looks like it is being swallowed up by the bottom tier. I know that is the way some people like their cake to look but not me. However sometimes you just have to do what the boss tells you to! It maybe not have been the look the customer was going for, but we had no complaints. Cake fillings

Fruits, jams, jellies, peanut butter, fudge, whatever you can think of usually can be put inside of a cake. Everyone likes a surprise filling inside that pretty white iced cake. How you fill your cake depends on what you are filling it with. I recommend if you are filling you cake to first add a circle of icing to the outer edge of your cake, so nothing leaks out. Some people like to add a entire layer of buttercream in the middle than a thin layer of peanut butter or jam over it.  Some people just want a thick layer of fudge or mousse with no icing under it.  So it is basically up to you how much of the flavor you would like in the center of your cake on what you do.

Flavoring Buttercream

Flavoring buttercream is not hard to do; all it takes is a bit of patience, a good extract, and a great buttercream. Place the buttercream into a bowl and add the extract a bit at a time and taste as you go along to find your right formula. Where I work we add 1 ounce flavor to 3 pounds buttercream.  Once you find that perfect combination, always remember to write it down so you have it for next time!

Non Traditional Cakes

WhimiscalNon traditional  cakes are the new trend! Most brides realize that they probably will only have one multi tiered cake ever, so why have it traditional? They have the cake personalized to their style, what ever that may be~ multi colored, topsy turvy, bottoms up. What ever you like is what you should get. Remember it is your day!

Which Recipe Should I Choose?

There seems to be a million of recipes out there. So how do you choose which one to use? I search a variety of  websites and find about 5-7 different recipes. From here I look to see which ones are similar to each other, I usually choose one of those. I usually go with the ones that are the most healthy for me.

Rice Pudding Recipe ~ Lactose Free

This recipe can use any type of milk, it does not  have to be lactose free….

Add all the ingredients listed below into a bowl and place over a double boiler. Simmer the bowl over boiling water stirring occasionally for about an hour and a half or until it reaches a consistency you like. Remove from heat and add any extra ingredients such as nuts, raisins, or cinnamon. Enjoy!

1 cup rice

2 cups water

4 cups milk

1/4 cup splenda

1/4 cup sugar

1/2 teaspoon  salt

1 1/2 teaspoon vanilla
